Spicy Coconut Chicken Curry

I am so addicted to Indian food right now! This recipe is great for any skill level.

This is a great recipe I modified to produce a rich and spicy coconut chicken curry. The chicken cooks for over an hour to give you “melt in your mouth” chicken with a rich, spicy sauce. Your taste buds will be thanking you after preparing this recipe. Serve it with our Garlic Naan Bread for an authentic Indian feel.

Spicy Coconut Chicken Curry

This is a rich and slightly spicy coconut chicken curry. It pairs well with naan bread and Indian style rice.

  • 2 pounds Boneless, Skinless Chicken Thighs
  • 2 tbsp Curry Powder
  • 1 each Onion Sliced Thinly
  • 1 1/2 tbsp Vegetable Oil I use Extra Virgin Olive Oil
  • 1 tsp Salt and Pepper
  • 1/8 tsp Cayenne Pepper I use 1/4 tsp. I like it spicy!
  • 2 cloves Garlic minced
  • 1 can 14 oz. Coconut Milk
  • 1 can 14.5 oz. Crushed Tomatoes
  • 1 can 8 oz. Tomato Sauce
  • 3 tbsp sugar


  1. Prep your chicken thighs by cutting into bite size pieces and season with salt and pepper. Set aside.

  2. Chop up your onion into thin slices.

  3. Mince up your garlic

  4. Heat your oil and curry powder in a large skillet over medium-high heat for about 2 minuets or so. (Don't let it burn)

  5. Add your onions and garlic into the curry oil. Coat and cook for 10 minuets on medium heat.

  6. Add your chicken into the skillet. Cook the chicken until it is no longer raw, and the juices run clear. 

  7. Add in your coconut milk, tomato sauce, crushed tomatoes, cayenne, and sugar into the skillet. Stir and combine the sauce. Cover and simmer for 1 hour over medium- low heat to let the flavors develop. Make sure you stir every so often. Add more cayenne, salt and pepper to your taste if you want.

  8. Serve over rice with naan bread.  Garnish with fresh chopped cilantro or parsley.

Recipe Notes

For a non-spicy version, just leave out the cayenne pepper!
