I wanted to make something fun for dessert this year for father’s day, so I found this idea for Hamburger Cupcakes on Pinterest. Since I am in Texas right now and near my father, I decided I would give it a try. I asked my dad his favorite flavor for cake and he replied “Vanilla”, so I went to the store and purchased my ingredients.
The idea of the Cupcake hamburger is easy. A brownie “patty” with cupcake “buns”, and icing “toppings”. I decided to keep it simple my first try and bought boxed mixes as pictured above. You can decide what type of icing you would like to use, but I made my own homemade buttercream frosting. (I will include recipe!) You will need the following:
- Boxed Cake Mix (Or make your own)
- Boxed Brownie Mix (Or make your own)
- Food Coloring
- Vegetable Oil
- 2 sticks of butter (For Buttercream Frosting)
- Powdered Sugar (For Buttercream Frosting)
- Vanilla Extract (For Buttercream Frosting)
- Cream Cheese 8 oz. (For Buttercream Frosting)
- Cupcake Liners
- Muffin Pan
- Frosting Piping bags or zip lock bags
First, I made my brownies (Follow instructions on box). I messed these up by leaving them in my small oven too long. The tops were burnt. I set these aside to cool. I still had enough to work with after removing the burnt areas, so after they were cooled I used an old scoop to cut out 2 inch round circles.
Next I made the cupcakes (Follow Box Mix Instructions). I watched my cupcakes like a hawk! I did not want a repeat mistake of these burning as well. My time paid off, and after cooking four batches of six cupcakes, ( small ovens! lol ), I finally had two dozen beautiful cupcakes.
Once all my cupcakes were cooled off, I used a steak knife (yes, I’m limited in my tools), to cut each cupcake in half.
Now we are ready to make the frosting!!!! The best part if you ask me. I grew up eating my mom’s homemade buttercream frosting on everything, so I could not desecrate these hamburger cupcakes with store bought icing. Here is what you need to make your own delicious buttercream frosting:
- 2 sticks of unsalted butter softened
- 1 package of cream cheese (8 oz.)
- Vanilla Extract (2 and 1/2 teaspoons)
- Powdered Sugar (4 cups)
This frosting is very easy to make. First I used my hand mixer (My electric stand mixer is in Illinois) to mix the 2 sticks of softened butter. After mixed smooth, add the cream cheese and vanilla and continue mixing until it is smooth and creamy. Next I added the powdered sugar, a 1/2 cup at a time, slowly mixing until smooth each time. Once you mix all 4 cups, it is really up to your tastes if you want to add more sugar. Next I separated out portions of the frosting into bowls and used my food coloring gel to make red ketchup (which turned out more pink), yellow mustard, and green lettuce. Make sure if you are in a hot area, to watch your frosting. Don’t let it melt in the heat. I transferred my frosting into zip lock bags, (you can be fancy and use pastry bags), and cut off the tips.
Now the super fun part!!! Lets put the babies together and decorate!!! Start with your bottom “bun”, next comes the “patty”, then I started with the ketchup layer first. You can do any layer you want, even a cheese layer!
Next I did the mustard!
Last is your lettuce. I cut my bag too big at the bottom, so my lettuce frosting is a bit big. Oh well, I just went with it! lol After you are finished you can start putting on your tops!
Once your tops are on, you can get fancy and add sesame seeds or white sprinkles so they look like even more authentic hamburger buns. Just brush the tops with a little water and sprinkle on! Done! Beautiful Cupcake Hamburgers!!!!!!! I could not find any white sprinkles at the store *gasp* so my burgers are plain.
And there you have it. Hamburger Cupcakes with buttercream frosting. Looking back I would of watched my brownies more closely, and maybe choose anther food coloring, but all in all these were extremely successful! They were moist and delicious.
